I Tried It // Lemon Cake

Here’s another project we did just for us! I’ve been having a great time making things that are inspired by projects we’ve seen online. It’s nice to slow down a little and just enjoy creating! I wanted to make a cake from scratch for Maggie’s baptism, and we had a few end-of-the-season lemons on our trees that I wanted to use. So I did some hunting online and found Love and Olive Oil’s Greek Yogurt & Meyer Lemon Bundt Cake. It was the prettiest looking cake and I thought it would be so sweet for a little girl’s baptism party.
The instructions looked a little daunting at first but I actually found that everything came together really simply! We ended up making the cake a day ahead of time and then doing the glaze on the day of the party, about 4 hours ahead of time. It all held perfectly. It was my first bundt and it came out a little more brown on the outside than I would like, but the glaze makes everything look nice anyway. It’s a dense cake, so we served it with some vanilla ice cream and it made a perfect combo!
